Day 3...

Well - this morning Mr. P. got up and made himself a couple of fried eggs before he left for work. He came in and said "since I can't have butter, what can I use to keep my eggs from sticking?" Better yet...why are the eggs sticking to the non-stick pan? 

I told him coconut oil or olive oil. He chose grapeseed oil. It's not banned on for Whole30, but it's also not the best choice because it's high in Omega6 fatty acids. Apparently you have to keep your Omega3s and Omega6s balanced? Who knew eating was so much work?

Breakfast for me was a large sweet potato with cinnamon. I have really got to get on the ball here and whip up some mayo, ghee, and salad dressing. I thought about sauteing some fresh pear slices in a little coconut oil and sprinkling with more cinnamon, but frankly, I didn't want to wash the pan. Again. 

Another point i've noticed - it sure seems like i'm doing the dishes non-stop. I really want to whip up some chicken and / or tuna salad with some approved mayo (homemade) and diced apples, pears, grapes and probably some nuts for the chicken salad. 

Lunch for me was a couple of hamburger patties and a glass of water. 

My grocery trip didn't produce what I had planned so I decided to wing it. I made a stir-fry with jumbo shrimp, fresh broccoli (trimmed to small florets), a handful of baby carrots (shredded), 1/3 bag of angel hair cole slaw mix (this bag happened to be nothing but cabbage), a spoonful of ghee, some garlic and olive oil. It was actually pretty good for not having anything much to it. We also split an avocado...and more water. Water water everywhere...

I think a handful of cashews (which Mr. P. detests) and some coconut aminos would make this stir-fry delish. I mean I would make it again as is and well cashews would be yummo!

After doing the dinner dishes (seriously, i've never done so many dishes in my life) I whipped up some Failproof Paleo Whole30 Compliant Mayo thanks to Sonia over at The Healthy Foodie! So I will be making some chicken salad - woo hoo!

Mr. Paisley is sooo not enjoying this - has he read the book? No. He thinks he can have like 5 foods. Ever. For 30 days. I need to step it up a notch and get some cooking done so that he can stick with it for the 30 days. I think if I have it made up ahead of time he'll suck it up and see it to the end with me. I won't lie - it's not easy. It is so hard (and time consuming) to fine anything that doesn't come from the produce department that you can use. I don't have enough hours in my day to dice tomatoes to make a pasta sauce to go on spaghetti squash. Example - hit up Trader Joe's today. I left without chicken broth. Because every brand they had contained something on the "No" list. Seaweed extract, soy-whatever, sugar...the coconut water had sugar. I paid $8 for a small jar of almond butter because they had a house brand that was nothing but almonds. Applegate lunch meat - nope - cured with sugar, that seaweed junk....even the frozen vegetables were a no go! I left with the almond butter, a jar of ghee, a jar of unsweetened applesauce, a small jar of sun dried tomatoes, a small can of tomato paste, and a bag of jumbo shrimp for $34.

I have no idea what i'm going to have him make for dinner since i'm working late this week. It's only day 3.
