Day 12 - getting closer to the halfway mark!

Things I have noticed since starting this "diet" - I'm not tired in the morning. Don't get me wrong, I am still not a morning person, but when the alarm goes off, I get up. No snoozing! I get up a lot more while I'm at work. Constantly up and down going to the break room to refill my Tervis Tumbler. No slump in the afternoon - that "it's 3:30 and I can barely keep my eyes open" feeling. 


  • Breakfast - chicken salad (with grapes, apples and almonds)
  • Lunch - leftover Apple Cider Vinegar pork chop, a sweet potato and a spoonful of balsamic rosemary potatoes. Both the pork and the potatoes warmed up well. Pork in the microwave and potatoes in the toaster oven. Just as good as they were the night before!
  • Dinner - bunless burgers with sauteed mushrooms and roasted asparagus, squash and zucchini.

We left out the bacon (still haven't found any locally that is compliant) and they were quite tasty! I ate mine plain (aside from the mushrooms) and Mr. P. slathered his with mayo and mustard. I found it to be quite good on it's own.
